      Title: Chicken Enchiladas
 Categories: Poultry, Mexican
   Servings:  5

      3 c  Finely chopped chicken or           2 c  Shredded cheddar cheese
           Turkey                              4 oz Can chopped mild green chili
      1 c  Chopped onion                       2 tb Chopped pimiento
    1/4 c  Margarine                         1/2 ts Chili powder
      4 c  Water                              10 ea 8" flour tortillas
      1 tb Chicken-flavor bouillon             1 x  Chopped parsley
      8 oz Container sour cream

  Heat oven to 350 degrees.  In a medium saucepan, cook onion in margarine
  until tender.  stir in flour then water and bouillon.  Cook and stir until
  thickened and bouillon dissolves.  Remove from heat.  Stir in sour cream.

  In a large bowl, combine 1 cup of the sauce, chicken, 1 cup of the cheese,
  chilies, pimientos and chili powder.  Mix well.

  Dip each tortilla into remaining sauce to soften.  Fill each with equal
  portions of chicken mixture.  Roll up.  Arrange in a 13 by 9 inch pan.
  Spoon on the remaining cheese and the parsley.  Bake 25 minutes or until
  bubbly.
