          Cuban Chicken and Corn Pie

          3 T. butter
          4 eggs, beaten
          8 ears of corn, freshly grated or
            1 can (1 lb.) cream style corn
          1/2 lb. Monterey Jack, grated
          3 c. diced cooked chicken
          1 c. diced cooked carrots
          1 c. shelled peas
          1 c. julienn-cut green beans
          1/2 c. pitted black olives, slice
          1 c. chicken stock
          2 T. raisins
          1/2 c. diced green bell pepper
          1/2 c. diced red bell pepper
          1 t. salt
          1/2 t. fresh ground pepper

          Butter a 2 quart shallow baking dish with 1 tablespoon of
          the butter.   Combine eggs, corn and cheese in a bowl.  In
          another bowl, combine all remaining ingredients except the
          butter.  Layer half the corn mixture in baking dish and
          spread vegetable chicken mixture on top.  Top with
          remaining corn mixture.  Dot with remaining 2 tablespoons
          butter, place in oven preheated to 350 degrees and bake
          for 1 hour.
