      Title: Mexican Steak
 Categories: Meats
   Servings:  8

      4 lb Sirloin tip roast, boneless              Sliced or 4 oz. can green
      3 lg Onions, sliced                           Chilies
      4 lg Tomatoes, sliced                    1 x  Salt\pepper to taste
      4 ea Fresh long green chilies,

  Slice meat in 1/2 inch slices, then into 4 inch strips.  Sprinkle pepper
  generously on both sides and press into meat.  Sear each strip on both
  sides no longer than 1 inch.  In a roasting pan or a crockpot, layer
  onions, tomatoes, chilies and meat.  Salt lightly.  Repeat, ending with
  vegetables, as many layers as needed.  Cover and cook on top of stove,
  simmering for 30 minutes or in a crockpot until you're ready!
