Navy Bean Soup
8 C hot water
1 lb  (about 2 1/2 cups) dried Navy Beans
2 cups cubed smoked ham (or hot dogs)
1/2 C finely chopped onion
bay leaf
Bouquet garnis, or seasoning.
Salt and pepper to taste

Add beans and water to large pot. Bring to rapid boil;  boil for 2 minutes.
Remove from heat.  Cover and let stand 1 hour.  Stir in remaining
ingredients.  Heat to boiling;  reduce heat and simmer until beans are
tender;  about
1 1/2 hours.  Add water during cooking time if necessary.
To increase broth consistency, remove 1/4 cup beans, mash and stir back into
soup.  Salt and pepper to taste.
Makes about 7 (1 cup) servings.
