      Title: Potato, Feta And Scallion Salad
 Categories: Salads
   Servings:  4

      6 md Red skinned potatoes                3 tb Red wine vinegar
    1/2 c  Olive oil                           2 tb Finely chopped fresh dill
      2 lg Cloves garlic, pressed              1 x  Salt/fresh ground black
      1 c  Crumbled Feta cheese                     Pepper to taste
    1/4 c  Finely chopped scallions            8 ea Black olives for garnish

  Scrub potatoes thoroughly under running water.  Boil in lightly salted
  water until tender, about 18 to 20 minutes.  Cool until manageable and cut
  into 3/4 inch dice.  In a large bowl, toss the potatoes with olive oil and
  garlic, then cool to room temperature.  Add the feta and scallions to the
  potatoes and drizzle with vinegar.  Add the dill and season to taste with
  salt and pepper.  Toss all the ingredients together gently.  Allow the
  salad to sit for an hour in order for the flavors to settle.  Garnish with
  the olives and serve.
