          PIZZA STUFFED POTATOES

          1 baking potato (6 oz.) baked
          1/4 oz. mozzarella, shredded and divided
          1/4 c. tomato sauce
          1/4 c. ricotta cheese
          1/8 t. oregano
          1/8 t. garlic powder
          2 t. grated Parmesan
          1/4 c. pepperoni, chopped

          Cut baked potato in half lengthwise.  Scoop out the pulp
          from the potato halves into a bowl, leaving 1/4 inch
          thick shells, mash pulp and reserve shells.  Add 1 oz.
          mozzarella, the tomato sauce, ricotta cheese, oregano,
          garlic powder and pepperoni to potato pulp and stir to
          combine.  Spoon 1/2 of the potato mixture into each
          reserved shell and top each with 1/2 of the remaining
          mozzarella cheese and 1/2 of the Parmesan.  Set potato
          shells in a 1 quart casserole and bake until thoroughly
          heated, about 10 minutes.  Makes 2 servings.
