          Spicy Hot Garlic Chicken

          1 broiler fryer chicken (3 lb.)
          Sauce:
          2 t. minced fresh ginger
          2 small cloves garlic, minced
          2 green onions, including tops, minced
          1/3 c. soy sauce
          2 t. hot Chili Oil
          3 T. red rice vinegar
          1 1/2 T. sugar
          1 t. sesame oil
          Pinch fresh ground roasted
          Szechuan peppercorns
          Chinese parsley (cilantro)

          Place chicken in enough boiling water to cover and cook
          for 10 minutes.  Turn off heat and let stand for 10
          minutes more.  Remove chicken, rinse under cold water and
          refrigerate until cold.  Bone chicken completely, except
          for wings, keeping meat in large pieces and leaving skin
          on.  Slice meat 1/2 inch thick and reassemble on a serving
          platter to recreate the original shape if possible.  To
          serve, combine Sauce ingredients well in a bowl and spoon
          over chicken.  Garnish with parsley leaves.

          Variation:
          Mild Onion Chicken.  For a milder sauce, combine 2 tsp.
          minced fresh ginger, 1 minced green onion (including top),
          1 T. salt and 1/2 c. vegetable oil.  Spoon over chicken as
          directed above.
