          Vicki's Secret Meatloaf/Sandwich Recipe

          1 T. olive oil
          1 green pepper, fine chopped
          1 fine chopped yellow onion
          1 red bell pepper, fine chopped
          1 clove minced garlic
          1/2 t. dried basil, crumbled
          1/2 t. thyme, crumbled
          1 large egg
          1 lb. ground beef, lean
          4 oz. ground pork/veal, lean
          1 c. unthawed corn
          1/2 c. old fashioned oatmeal
          2 oz. mozzarella cut in 1/4 inch
            cubes
          1/4 c. grated parmesan cheese
          1/2 t. salt
          1/8 t. black pepper
          1/4 c. ketchup
          *2 loaves crusty Italian Bread
            (if making sandwiches) split
            lengthwise

          Preheat oven to 375 degrees.  Heat oil in a 10 inch
          skillet over moderate heat for 1 minute.  Add onion and
          saute' for 3 minutes.  Add green and red peppers, garlic,
          basil and thyme and saute', stirring occasionally, for 5
          minutes or until the vegetables are limp.  Set aside.
          Beat the egg in a large bowl until frothy, add the beef,
          pork or veal, corn, oats, mozzarella, parmesan, salt,
          pepper and skillet mixture.  Mix well with your hands,
          then pat into a lightly greased 9 by 5 by 3 inch loaf
          pan.  Bake uncovered for 25 minutes.  Remove the pan from
          the oven and brush the top of the meatloaf with the
          ketchup.  Return to the oven and bake, uncovered, for 25
          minutes more or until the loaf is no longer pink on the
          inside.  Let stand for 10 minutes, then cut into 1/4 inch
          slices.  *Arrange along the bottom half of each loaf of
          bread if making sandwiches and cover with the tops.  Cut
          each loaf into 4 pieces.  Serves 8.  Really great with
          mustard, mayonnaise and ketchup on the bread too.  Note:
          I always get rave reviews with this one.
