          Yummy Pork Casserole

          4 lean, center-cut pork chops,
            about 1/2 inch thick
          16 oz. can sauerkraut, undrained
          1 medium thin sliced onion
          1 large thin sliced apple, (I use
            Macintosh or Granny Smith)
          2 T. parsley
          2 t. brown sugar
          1/2 t. allspice
          salt/pepper

          Preheat oven to 350 degrees.  Brown pork chops on both
          sides in a large skillet that is lightly coated with
          cooking oil or sprayed with non-stick vegetable cooking
          spray.  Sprinkle with salt and pepper as desired.  In a
          large bowl, toss sauerkraut, onion, half the apple slices,
          parsley, brown sugar, allspice and 1/2 teaspoon salt.
          Transfer to an 8 inch casserole or baking dish.  Lay pork
          chops on top of sauerkraut mixture and top with remaining
          apple slices.  Cover and bake for 1 hour or until pork is
          tender.  Makes 4 one-chop servings.  Note:  I like to
          serve this with egg noodles, homemade apple sauce and dark
          bread.
