
Title:    Broccoli Casserole

Ingredients:
10 oz. package of frozen cut broccoli
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup of American Cheese shredded
1/2 cup of mayonaise
2 Tbls butter
1 1/2 cup of Bread crumbs

Cook broccoli as per instructions.  Blend soups, cheese, mayo and
broccoli in casserole dish.  In sauce pan melt butter add bread crumbs
and lightly toss.  Put bread crumbs over casserole dish.  Bake 45
minutes at 375.

Yes, they were.  I am still pooped.  My original guest list increased by
6 when my family suggested we invite a "homeless" family to join us for
dinner.  Two hours before serving time.  I gotta tell you, this was one
of the most special of all my Christmas dinners.  The camaraderie and
warmth from those four children was...in a word, special!  And we still
had leftovers to send a package with them, and have leftovers for the
cold buffet while we watched the Houston Oilers/Buffalo Bills game
Monday night.

TITLE:    ENCHILADA CASSEROLE

1 lb. ground beef
1 med. onion, chopped
1 clove garlic, chopped
15 oz. tomato sauce
12 corn tortillas
1 med. green pepper, chopped
16 oz. Ranch Style(tm) beans
1 c. picante sauce
2 c. grated cheese

     Brown meat with onion, pepper and garlic. Drain. Add beans,
tomato sauce and picante sauce. Simmer 15 minutes. Spoon small
amount into 13 x 9 inch baking pan. Spread around to coat the
bottom of the pan. Top with 6 tortillas, overlap to cover bottom
layer. Add half of remaining meat. Cover with tortillas. Add rest
of meat and cover with foil. Bake at 350 for 20 minutes. Uncover
and add cheese. Bake for 5 more minutes.

The following recipes are original, mostly my own (although a couple are
from family members.)

     Title: Christmas Casserole
Categories: Holiday, Fish
  Servings:  4

      1 cn Salmon; 6 1/2 oz or 233 g
      2 c  Soda crackers-coarsely crush
      1 cn Corn; creamed, 14 oz
      1 c  Cheddar cheese; grated
    1/4 c  Milk
    1/4 c  Green pepper, cubed
      1    Egg
    1/8 ts Pepper
      1 ts Butter
      2 T  Almonds; thin sliced

    Preheat oven to 450F. Drain salmon in large bowl. Remove skin and bones.
  Flake. Crush soda crackers with rolling pin coarsely. Add to salmon,
  reserving 2 Tbsp. Add corn, cheese, milk, green pepper and pepper. Mix.
  Beat egg lightly with fork in small bowl and add to salmon-corn mixture.
  Mix well. Put in greased 6 cup casserole dish with lid. Smooth top. Top
  with reserved crushed soda crackers and dot with butter. Sprinkle top with
  thin sliced almonds.
   Bake covered 30 minutes at 35O. Uncover for last 5 minutes.

  This is based on my grandmother's recipe and was originally made with
  oysters. (They came in on trains to Iowa at this time of year at the
  turn of the century and in the 20s.)

memories I had with Burger Chef Fries in college, Lum's beer steamed Hot
Dogs in Omaha while serving at SAC HQ, and all the hundreds of other fat
laden, sugar filled,salt packed prepared food of an earlier (less
complicated) time and place.

  Servings:  6

  2 1/2 c  Cooked Rice
      1    Small jar Cheeze Whiz
      2 cn Undiluted Cr. of Mush. Soup
      1 c  Onions, chopped
      1 c  Celery, chopped
      2 pk Brocoli, chopped

  Sautee onions and celery until tender.  Mix Cheese
  Whiz with hot rice. Mix soup, cooked brocoli, onion
  and celery and then put all together, let set for one
  half hour and then bake uncovered in 350 degree F.
  oven for one hour.

     Title: Chicken Rice Casserole
Categories: Main dish
  Servings:  6

      4 c  Rice, cooked
    1/2 c  Onion, chopped
      1    Green Pepper, finely chopped
      1    Diced Pimento (sm. jar)
      1 cn Cream of Chicken soup
    1/3 c  Mayonnaise
    1/2 c  Milk
    1/4 ts Pepper
      1 c  Cheddar cheese (grated)
      4    Chicken breasts (diced)

  Combine rice, onion, bell pepper and pimento.  Blend
  in soup, mayonnaise, cheese, milk, pepper and chicken.
  Turn into shallow 2-quart buttered casserole and cover
  with more grated cheese.  Bake at 350 degrees for 20
  to 25 minutes or until bubbly.
